#budgetbasics On Monday Easter for lunch, I started to prepare a simple family's meal, we were still in lockdown and stay home for safety, so I use whatever I found in the pantry and fridge.

- 6 Bacon rashers, fried first then cut in small rectangular size
- 1 Breast chicken cut into cubed marinated for 15 minutes in a
- mixture 1/2 cup Teriyaki sauce & 1/2 lemon juice and salt
- 1/2 cup Teriyaki sauce
- Juice of 1/2 lemon or kaffir lime
- 1 1/2 cup leftover cooked Roasted Potato, cut into tiny cubed
- 1 cup Cooking Rice Bran oil
- 1 large white Onion chopped
- 2 garlic cloves minced
- 1 / 2 red capsicum cut into small rectangular pieces
- 3 bottons mushrooms, diced
- 1/4 Leeks, washed then diced into small pieces that fills 1 cup
- 6 eggs, well beaten
- Then add 2 tbs cold milk (egg wash) and stir. Then
- add the following 5 dry ingredients: 1 tsp Cayenne pepper,
- 2 tsp Paprika, salt, crushed Black pepper &
- 1 cup fresh Parsley leaves finely chopped
- 1 cup double Cream
- 1/2 cup Self-raising Flour
- 1 cup grated Cheddar Cheese
- Grease lightly the base& side a 30 cm deep Flan dish or Pie dish
- For the Garnished: a stalk of fresh Coriander leaf
- Side dish:
- 1 small bowl of raw mixed salad
- toss with an Italian salad dressings: a mixture of 1/4 tsp salt,
- 1 / 2 tbs Balsamic Vinegar& 1 tbs Italian Extra Virgin Olive oil
Instructions to make to make Teresa' s Easter Family Quiche ๐ค๐๐ฃ๐ฅ๐๐คน♀️๐๐๐น
- In a wok fill with hot oil, cook the marinated chicken until lightly brown on both sides. Remove, sprinkle with salt and set apart in a bowl dish.
- Then cook the bacon and remove, set aside. Then in the wok that has still the oil, add the Onions and stir-fry until just changed colour then add the Red Capsicum, Leeks and stir-fry for 2 minutes.
- Then add the leftover cooked Potatoes, mushrooms & garlic and stir-fry for another 2 minutes. Remove and put the mixture into a medium size bowl and set aside.
- In a big bowl put the eggs, beat them well with a fork then add 2 tbs milk to dilute (eggs wash) and mix again then add the dry ingredients: paprika, cayenne pepper, salt, crushed black pepper and the parsley and mix all together with a big spoon. Then add the double cream and the cooked chicken and mix well with a big spoon.
- Then lastly put the Self-raising flour into the eggs mixture and with the big spoon mix them all gently, but at this stage don't over mix! If the mixture is too thick then dilute with 2 Tbs milk. Pour over the mixture into the prepared Flan or Pie dish. Sprinkle on top surface with the grated Cheese.
- Bake in a preheated oven at 200 degrees (C) for 20-25 minutes until light brown & firm in the centre. (Test the center by a knife inserted on top centre. If it comes out not clean, then the Quiche is not cook and do bake an additional 5 minutes). Remove from oven and let stand for 5-10 minutes before turning out and serving. Spread on top the cooked fried Bacon pieces.
- Decorate on top centre with Coriander leaves. To serve: with a bowl of raw salad. Enjoy ๐For individual cut the Quiche into 6 portions and put the fried Bacon spreading on top of the Quiche pieces and place an individual side dish, a small plate of green mixed salad. Cheers๐
